Whole Wheat Pumpkin Chocolate Chip Cookies

No beating around the bush here...I LOVE THESE COOKIES!!!! Oh my goodness, soooo delicious. And the recipe is very simple and quick!

Pumpkin Chocolate Chip Cookies

1 can of pumpkin
1 cup sugar (I use Sucanat)
1/2 cup oil (I use olive or coconut oil)
1 egg
2 cups flour (I use freshly milled)
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 teaspoon vanilla
2 cups semi-sweet chocolate chips

  1. Pre-heat oven to 350 degrees.
  2. Combine all ingredients and drop by spoonfuls onto baking sheet.
  3. Bake for 10-12 minutes until lightly brown and firm.

Yummy! I'm going to try some of these, hopefully tonight. I caught a ton of canned pumpkin on sale last year after Thanksgiving and have been looking for new things to do with it.
